Truffle and Goat Cheese Polenta

  • 4 cups of water
  • 1 truffle bullion cube
  • 1 cup corn meal
  • ½ cup sour cream
  • 2 dried ancho chilies, chopped
  • 2 ounces goat cheese
  • 1 tbs. green onion, minced
  • 1 tsp. black truffle salt

In a pan boil water and the bullion cube. Slowly add corn meal and stir until it is smooth. Reduce the heat and cook for 10 minutes. Remove from heat. Add the sour cream, ancho chilies, goat cheese ,and green onion. Put this mixture into a bowl. Put the truffle salt on top of the mixture. This can be served hot. To add a little variation to the dish put a poached egg on top.

Hearty Italian Vegetables Soup

  • 2tbs. olive oil
  • 1 onion, chopped
  • 2 clove garlic, chopped
  • 2 carrots, sliced
  • ½ tsp black truffle salt
  • 1 cup dried faro
  • 4 cups chicken stock
  • 1 tomato, diced
  • ¼ tsp red pepper flakes
  • 1 bunch kale, torn into pieces
  • 3 cups water
  • 2 can cannellini beans, rinsed and dried
  • 1 tbs. parsley
  • Grated parmesan cheese

Heat the oil in a large pan. Add onion and garlic. Cook for 5 minutes. Add the carrots and exquisite black truffle salt. Add the faro. Cook 1 minutes to coat in the oil. Add the chicken stock, tomato, red pepper flakes. Allow the mixture to boil. Cover the pan. Reduce the heat. Allow mixture to simmer for 20 minutes. Add the kale and the water. Cover. Allow to cook for 10 minutes. Add the beans. Cook for another 10 minutes. Spoon the soup into bowls. Top with parsley , cheese, and another sprinkle of black truffle salt.
