I’ve been writing fall cookbooks for over two years now and haven’t posted much pumpkin pie recipe yet. It has been such a chore to pick what to bake with so many amazing recipes already, but it just seems like the right time to share with you my easy, no fuss pumpkin pie. This is my favorite comfort food and a staple family meal in my household. Many friends asked me to help them bake a family-style pie, so I decided to whip up this easy recipe for them. They are addicted to the taste of this comforting pie, and I hope I do not disappoint them!

 

The ingredients are relatively simple to find

All you need for this delectable autumn treat is a nice paleo pie crust, a layer of pumpkin pie filling, and a few helpful spices like kosher salt and apples to top it off. If you want to try something different, try spicing up the pumpkin pie recipe with some spices like cinnamon or nutmeg. You can also add nutmeg to the crust. If you are not a big spice fan, simply use the natural flavor of the apples, brown sugar, cinnamon, and butter to give you’re filling the added spices for that autumn flavor.

 

If you aren’t a pumpkin pie recipe fan but need to try this dairy-free pumpkin pie recipe anyway, then feel free to skip over the crust in this version and just bake the entire thing in the oven. Why do you ask? Well, one reason is that I don’t feel like serving dessert after a hearty meal, so baking a bigger meal and serving it over a hot stovetop takes care of that! Since pumpkin pie is typically served at Thanksgiving, and thanksgiving is a big feast, this method is fast and easy.

For starters, thanksgiving recipes typically include some sort of pumpkin or butternut squash. For some odd reason, squash seems to have a stronger flavor when it’s served raw. Perhaps it’s because of all the rich spices it has or perhaps it’s because of how we’ve always ordered our thanksgiving dinner in this country. Whatever the reason is, I think it’s a fantastic idea to top off this dish with some Vanilla pudding.

This dessert works well with any kind of dessert pie and with a variety of sweet ingredients. There are plenty of excellent recipes available online. A quick search on “whip cream” should yield a few results. Just look for “whip cream cheese” in your search and you should find a plethora of sweet options. One of my favorites is made using potato starch.

 

The pumpkin recipe is also a great vehicle to use if you’re planning to create your own pull together Thanksgiving foods. If you’ve never cooked with pastry ingredients before, I would highly recommend trying this recipe. It will make creating your own dessert a breeze. The only difficult part might be finding the ingredients.

 

To make the Pumpkin Pie Recipe more interesting

I suggest preparing your own pie shell. You can either find one at your local discount store or online. If you don’t have a pie shell, simply line the bottom of a large mixing bowl with a couple of tablespoons of light cream cheese. You’ll need to use about four cups of all-purpose flour, two cups of sugar, three eggs, one tablespoon of vanilla, and about two teaspoons of pumpkin puree. Simply mix all of your ingredients together until the ingredients combine thoroughly.

 

At this point, you simply pour your batter into the bowl and turn it over until the dry ingredients are covered by the wet ingredients. Then you simply fold in the rest of your ingredients and turn the dish out onto a floured surface. Cook your dish on the top rack of the oven for approximately two hours. Once your pumpkin pie has finished cooking, let it cool completely before removing it from the oven. You’ll notice that the eggs and milk have separated while the cream mixture is still relatively warm. Now you’re ready to enjoy your delicious meal!
